Nigerian public loves this dish. Beans are the main food crop source of protein. It is the only break away from the long list of starchy foods. It is eaten in every with or without a combination. Rice, plantain, cocoyam, yam or sweet potato could also be combined with beans. Beans could also be eaten with stew (Ewa Agonyin).The perfect combination with beans is corn. Just like a Siamese twin, they are inseparable. You will enjoy this meal the most when fresh corn is been used. Beans and corn are referred to as ‘Ewa Alagbado’in local language. It is best prepared during the rainy season when there is abundance of fresh corn.
To prepare this sumptuous meal;
The corn to be used is firstly boiled. It is then shelled from its cob into a bowl. The water used in boiling the corn may be used to cook the beans. The sweet taste of the corn would make the combination sweeter. A brown-black-eyed pea (drum beans) is best used for this meal. The bean is picked, rinsed and then turned into the boiling water (more would could be added) used earlier on. Onions are sliced and added to the beans that is been cooked now at a medium temperature for about 30 minutes (till the beans soften).
The cooked corn is then added at this point. The corn and the beans are turned with a spoon so as to spread evenly in the pot. Ingredients such as grinded pepper, crayfish, palm oil, seasoning and salt to taste are then added. It is allowed to cook for some five minutes after which the meal is done. It is then served and ready to be consumed.
There are several combinations with beans. Beans and corn stands out as it is rich in nutrients and it’s a delicious to taste. It has the six classes of food present i.e. carbohydrate, protein, fats and oil, vitamins, mineral salts and water. You don’t have to wait till the dry season to have this meal.
