Fried yam and sauce is another mouthwatering Nigerian food. Yam is been eaten in all part of the country. A great number of yams in the market are grown in the Northern parts of the country. Yam is one of the most sought after food crops in this part of the world. Yam can be cooked, pounded and fried but the later is quite sumptuous. Fried is often sold in the roadsides of major cities of Nigeria. It serves as snacks and it is often eaten as lunch in most cases. The sauce is used to perfect this delicacy.
PREPARATION
Before frying, the yam to be used is peeled and rinsed. Ingredients such as vegetable oil, salt, onion, pepper, crayfish, locust bean and seasoning are to be provided. The peeled yam is then fried in hot oil burning on a medium heat. A pinch of salt maybe applied on the yam before frying. This procedure is repeated till all the peeled yams are exhausted and well fried. In preparing the sauce, the onion and pepper (red pepper and tomato) are blended using a blender. The mixture is then turned into hot oil. Crayfish which must have been rinsed is then added with locust bean (optional). A pinch of salt is then added to taste. Seasoning may be added because locust bean serves the same purpose. It is then allowed to steam for few minutes. It is to be served with the fried yam thereafter.
