You must have probably tasted the assorted meat pepper soup which serves as an appetizer. It is very delicious and tasty, but when pepper soup is served as a main food, this can be described as a sumptuous meal.
Yam is one of the most important food crops grown in Nigeria. It has been used to make a variety of food. Yam pepper soup is another ‘mouth-watering delicacy’ you have to taste even if you are not a foodie. This will definitely be added to your menu when you try it out.
Ingredients
The ingredients for preparing this sumptuous meal include yam, beef, shaki (cow tripe), kidney, heart, ehu seeds (Calabash nutmeg), scent leaves, onions, habanero or chili pepper, seasoning cubes and salt to taste.
Before Preparation
The first step is to peel and cut the yam into cube shape. Rinse and then set aside. For the Calabash nutmeg, peel and grind with a dry mill. Slice the onions, scent leaves and pepper then set aside. Make sure you rinse them thoroughly in water. Rinse the beef & cow tripe thoroughly then cut into bit sizes.
Cooking Directions
- The toughest part of the meat which is the cow tripe is to be cooked first. Put in a pot, add the seasoning cubes and part of the diced onions. Pour water to cover the contents and start cooking on medium heat.
- The beef can then be added after 30 minutes. Then introduce the heart, kidney, yam cubes, the remaining diced onions, salt and continue for 15 minutes. Make sure you add water to the same level as the contents of the pot if necessary.
- When the yam is soft and a little porridge starts to form, add the sliced pepper/chili pepper and the scent leaves. Then stir, cover and cook for a couple of minutes after which your yam pepper soup is done.
