Kuli-Kuli is one popular snack that is native to Northern Nigeria. It is made from dry roasted groundnuts/peanuts. It is a crunchy snack that you won’t desist from tasting after a try. This snack along with cassava flakes (garri) has been very good to Nigerians especially students in boarding schools and tertiary institutions. Kuli-Kuli serves as an appetizer for some people. It is probably the most consumed locally made snack in Nigeria. Apart from Northern Nigeria where it is majorly made, it is also made by the Southerners. This snack comes in different shapes (you mold into any shape of your choice) and it is sold in markets and small shops (kiosk) all over the country.
INGREDIENTS
The ingredients for this snack are dry roasted groundnuts/peanuts, grated ginger, ground chili pepper, cloves, groundnut/peanut oil for frying.
DIRECTIONS FOR MAKING KULI-KULI
Grind or pound the roasted groundnuts/peanuts and ginger until they are smooth. Ground chili pepper may be added if you want it to be peppery. You can grind with a dry mill or mortar. Add a little groundnut oil to the mill/blender as you ground. Make sure it doesn’t turn completely to paste while grinding. With your hands, squeeze the groundnut paste formed to remove as much oil as possible (this is very important because the snack must be very crunchy and not too soft). The next thing to do is to mold the paste into any shape of your choice (circular, oblong, rectangular, etc). You can add a little water to help it mold easily.
Heat your groundnut oil in a frying pan or pot and put on medium heat. Heat until the oil begins to smoke. You can add a few slices of cloves or onions to the oil to give it some extra flavor. Add the molded groundnut paste to the oil and fry until golden brown. Do this for all the groundnut paste you have on ground. Remove from the oil when it turns golden brown, leave to cool completely. If your Kuli-Kuli turned out to be too soft, you can pop it into a preheated oven to dry out and harden without burning it.
