Ekuru is to corn; as beans is to moi-moi. There are lists of food from which corn can be processed into; the white moi-moi is another in this category. Corn is one of the major food crops in Nigeria especially the South-West where there is abundance of rainfall for plant growth.
Locally called ekuru by the Yoruba tribe of Nigeria, it has the same preparation as moi-moi especially the common one made from the bean black-eyed peas. This menu is served in naming ceremonies and traditional weddings in the South West of Nigeria.
How To Prepare Ekuru;
The delicacy is prepared by grinding desired amount of corn (especially fresh corn). Pepper and onions are added to be grinded with the corn. A little quantity of water must be added to make it thick (this is a difference in moi-moi). It has to be solid not too soft when served.
The grinded corn, pepper and onion are then mixed thoroughly in a bowl. Small amount of salt should be added as well as seasoning. Hot oil is added which maybe either vegetable oil or palm oil depending on your taste. The constituent is then mixed thoroughly to have a good blend.
The content in the bowl is put into leaves or tin cans. It is then steamed for about 30-40 minutes, after which it is ready to serve. It has a white/grey color when done.
Ekuru can also be from beans (grinded black eye-peas). This is called white moi-moi. The difference here is that no ingredient is added so the reason for its white color. It is preferable to eat with stew so as to replace the missing ingredients for taste. The one with corn is delicious with ogi(pap).
