Potato Porridge; A Nigerian Meal

Porridge is a delicious meal. It is not particular to a tribe but popular in the Southern part of Nigeria. Porridge could be made from food crops especially the tuber crops (water yam, yam, cocoyam and potato). Plantain porridge is another shot on porridge.  There was this story of using porridge to take another man’s birthright; it is truly a good looking and delicious food when it is well prepared. Irish or sweet potato could be used in this regard. The sweet potato is preferable due to its sweet taste. The ingredients used for perfecting this sumptuous meal include palm oil, pepper, dry fish, ugwu leaves, scent leaf, crayfish, salt and seasoning.

The ingredient should be ready before the cooking. The leaves must be rinsed and cut into smaller pieces. Dry fish and crayfish should be washed too. Grounded pepper must be on ground too. The potatoes is peeled and then cut into smaller sizes, it is then boiled (cooked) in a medium heat for about 15-20minutes.  The ingredients on ground are then added; vegetables, palm oil, pepper, crayfish, dry fish, seasoning and salt to taste. It is cooked for some minutes after which a spoon is used to turn the combinations. The potato porridge is ready after it has been mashed.  It can now be served; the attractive look of the food will raise your appetite.

Potato porridge has the same preparation with other tuber crops. The ingredients to be added may be more than what is stated here. Corn beef, assorted beef and garlic can also be added depending on your choice of food. This food just has to be on your menu list because of its rich and sweet taste.
