OGI; A LOCAL BREAKFAST MEAL

Ogi (pap) is a locally made food prepared from maize or millet. This name here is common to the people of Southwest, Nigeria. Ogi is called ‘akamu’ by the easterners. It is majorly taken as breakfast. Ogi can be taken with additions of milk, sugar and beans cake (akara). It can also be taken without any of these, depending on your taste. There is also custard; it is finely processed compared to pap but the later is assumed to be the best in quality. It is the best food for infants and those having difficulties in taking solid foods.

This food which is in liquid form is first prepared by processing the corn or millet to be used. It is rinsed and then grinded with a grinding machine until the maize becomes soft. After grinding, it is sieved to remove the fibers (impurities). It is from the pure content you take some quantities for your pap preparation.  It can be prepared through two ways. The first method is by boiling water and then stirring the grinded corn in a bowl. The hot water is then poured into the content gradually. It is then stirred thoroughly until it is smooth. It is ready after some minutes. The second method involves stirring the pap in a pot on a heat medium. Water is added and then stirred until it is fine and smooth.  It is then ready to be served after few minutes.

Sugar, honey and milk may be added to make it sweet and rich. Ogi is best taken with beans cake (akara). It can also be taken with beans. If you are to take pap as a breakfast then it is best taken alone or with akara balls because it has to be light. This food and breast milk are suitable for nurturing infants. Pap is good during cold weather as its hotness gives warmth and helps prepare for the day’s work as it provides energy. This food is very easy and quick to prepare.
