Have you tried Fried Potatoes for Lunch?

Potatoes can be used for making a number of meals such as potato porridge, potato chips and so on. The fried potatoes especially sweet potato (Ipomea batatas) is one you would enjoy for your lunch. Sweet potato is a starchy, sweet-tasting root vegetable. They have a thin, brown skin on the outside with colored flesh inside – most commonly orange in color, but other varieties are white, purple, or yellow.

While working in Ibadan, fried potatoes was my preferred meal for lunch. The people there refer to sweet potatoes as ‘Kukunduku’ in Yoruba language. Staff always queue to get these fried potatoes which can be taken with a plate of beans, sauce or fried eggs. The sweet and crunchy taste of this tuber crop is all you need to reenergize yourself for the continuation of the day’s activities.

Sweet potatoes are a rich source of fiber as well as contain an array of vitamins and minerals including iron, calcium, and selenium. The oil used for frying increases the absorption of beneficial beta-carotene; an antioxidant present in sweet potato. You can prepare your own fried potato by following the guidelines here.

Ingredients

Tubers of sweet potato, vegetable oil, and salt to taste.

Before Frying

Peel the skin of the tubers of potato with a knife, then wash in a bowl of clean water. Cut the potato flesh into flakes/chips and keep in another bowl.

Frying Procedure

Add a little salt and toss the contents in the bowl to distribute the salt. Pour sufficient oil into a frying pan or pot on a medium heat. When the oil is heated, add a few potato chips, leaving enough room for flipping the chips in the oil. Stir the chips till they have turned golden. Remove the chips and place in paper towels to absorb the oil. Do the same for the remaining chips in the bowl. Once this is all done, you can then serve your fried potato chips.

Serve with a plate of beans, sauce or fried eggs. Enjoy this meal with any soft drinks of your choice. Bon appetite.
