FRIED RICE; MY NIGERIAN RECIPE

Fried rice as we know it is a common Nigerian way of preparing rice. It is wildly accepted by lots of people. Most times it is served with chicken, beef, goat meat or any other protein of choice.

Fired rice, made the Nigerian way is delicious. It is usually filled with lots of fruit vegetables. So, this article is to teach you what you need in making the Nigerian fried rice and how to make it too.

A list of the items needed;

  1. Rice
  2. Cabbage
  3. Carrot
  4. Green beans
  5. Peas
  6. Green pepper
  7. Liver
  8. Sweetcorn
  9. Meat
  10. Vegetable oil
  11. Onions
  12. Curry powder
  13. Salt
  14. Black pepper

Meat preference varies so, feel free to use the meat you prefer. The process is still the same despite the kind of protein used. So, let us get down to the preparation.

THE PREPARATION

Firstly, parboil the meat with the ingredients; salt, onions, thyme, curry, seasoning cubes. Allow the meat to cook until properly tender. Then you can fry, grill, bake etc. but be sure to preserve your meat stock.

Afterwards, you can parboil your rice. Then, cook the parboiled rice with a part of the meat stock for about 10 to 15 minutes until it is properly cooked.

On one side, chop up all the vegetables and liver. It is better really tiny-diced.

Following this, in a heated pot, add the vegetable oil, all to heat properly then add the onions and stir for about 2 minutes. Then add the chopped vegetables and add the curry powder after about 2 minutes. Afterwards add the rest of the spice, salt to taste, grounded black pepper to taste.  You can add bit of the stock depending in how tender your rice is.

At this point, you can add the rice. Make sure your heat is low. Mix the rice and the vegetables properly and leave on heat for about 10 minutes. Keep stirring to prevent burning. If the rice appears dry to your taste then food is ready.  

Proceed to serve with protein and choice garnishing.
